Merry Christmas!

We have had a fun Christmas weekend.  The kids are at fun ages because Erik and Lainey have a pretty good understanding of what is happening and don't hide their enthusiasm yet. Very fun!

Saturday we went to church.  That was an adventure because Carson did not want to be in the nursery.  We got paged after about 10 minutes to get him.  Lainey came out too.  We already had Erik with us because his Sunday school class wasn't in session.  3 kids 4 and under in church is an adventure.

For the Christmas service they hand out candles to everyone and light them for the last song.  This was very exciting for Erik!


When we came home we had a birthday party for baby Jesus.  I have made a birthday cake for Jesus every year.  This year Erik insisted that we have balloons and streamers for him as well (just like we did at Erik's party).  It was a last minute request so the streamers didn't happen but we did blow up lots of birthday balloons.  Cute!

Today was pretty low key we stayed home opened presents and ate food.  Erik's favorite gift was his civil war musket.  Lainey loves her doll stroller.  Carson only received one present, a ball-dispenser thing, so I guess that is automatically his favorite. :)

Erik had left a note for Santa requesting an army gun and cap and shirt.  He was politely looking for them in this video, quite convinced that Santa didn't see his note.  I am so thankful that we had a gun for him or I would have had one sad little boy.

Friend or Foe?

It's easy to get really skeptical about the entire food industry while attempting to alter our families diet to resemble the 1950's staples.  For example, I am fairly convinced that the healthiest milk for my family would be organic, grass fed, low-temp pasturized, non-homogenized whole milk.  In other words - milk straight from the cow with the addition of low-temp pasturization.  Well, that milk is not sold anywhere in the county.  It is simply not available.  The best option is organic whole milk ($6.79 a gallon).  There is one store that sells organic milk from grass fed cows but the store is 10-15 miles from my house and they charge $12 a gallon for that milk.  Not practical or affordable.

Other frustrations lie in purchasing meats.  I found a source of local grass fed beef but there is no local option for free range chicken in the county (that I am aware of at least).  I probably should check with an amish farmer but I haven't yet.  There are a lot of amish farms close to our house but it is a little awkward to just stop by uninvited with 3 kids in tow.

So again, not easy to access meat or dairy in it's natural form.  Frustrating.

Of course finding highly processed food is not only easy, it is cheap. Even more frustrating.

Before I shake my fists at the food industry entirely though I must remind myself that commercialization of our food is somewhat necessary.  If you don't believe me let me tell you a story about my Grandma, known as GG in our house!

In 1958 GG was a young mom of 4 kids 6 and under.  Times were tough.  Living in rural Kansas they had been trying to support the family by farming were struggling so my Grandpa went back to work.  To supplement the families income they bought 1,000 chickens.  Yep, 1000!!

So, each day in addition to making butter after milking the cow (Grandpa milked the cow, grandma made the butter) my Grandma was responsible for washing and sorting 700 eggs!!!  Can you imagine?

In addition to making butter and cleaning 700 chicken eggs a day,  Grandma was also tending a VERY large garden, canning food, sewing all of the clothes for the family, cooking everything from scratch, all while tending to 4 kids 6 and under.  Yikes!!

I asked GG if they ever butchered the chickens and if Grandpa was the one to clean them.  She said they did occasionally butcher a chicken but that was "women's work!"  Ha!!

Can you imagine a group of today's 30 year old women butchering chickens and cleaning 700 eggs a day.  Me neither!


So, I don't completely hate the food industry but I do hope we find a way to make "real" wholesome and organic food cheaper and easy to access.

Food Challenge: Week 6 Full Fat Foods!

We made it through week five's adventure of adding new whole foods into our diets.  It went pretty well.  I introduced the following foods to our family....

1- Kale:  I used this twice.  Victor and I like it a lot.  Lainey didn't complain about eating it in the soup either.  Erik will not go anywhere near it.  He hates leafy greens and kale is included in this category.

2- Lentils:  I cooked the lentils in chicken broth similar to cooking rice (2:1 ratio) and seasoned it them with cumin.  I then mixed them into quesadillas with the grass fed beef I bought and corn.  Everyone ate them without complaining.  They replaced rice which was great.

3-Cranberries:  I put them in my oatmeal every morning and thought they were great (thanks Jill).  The kids hate having anything added to their oatmeal (except for cinnamon and honey) so I didn't try that.  I did add a cup of cranberries to their smoothies and this tasted great! No complaints.

4- Beets:  This was a pretty big reject.  I prepared them by boiling them and making a potato/carrot/beet salad.  I seasoned with dill, salt, pepper, and a tablespoon of mayonnaise.   Carson was willing to eat some plain veggies I left out for him.  Lainey wouldn't touch the beets no matter how they were offered to her.  Erik ate one bite of beets but only while plugging his nose and being bribed with a cookie.  Ha!  Victor and I ate them but I am not pining for more.  It was a good adventure at least!

Onto week six which is....  

Do not eat any food products that are labeled as “low-fat,” “lite,” “light,” “reduced fat,” or “nonfat.”

Americans are fat.  Really, really fat and for a long time we have blamed calories for all of our weight issues.  So to help counteract that thousands of "healthier" fat free versions became available.  Americans got even fatter.

I think it is fairly obvious that shoving yourself full of "low-fat" highly processed foods is in no way healthy - they are full of chemicals and artificial products that aren't good for you in any form.  I really try to avoid these foods already.

A little more controversial, in my mind, is the idea that full fat dairy products are better for you than low-fat products.  It seems that the full fat and low fat versions are still whole foods, offering the same nutrients and health benefits right?

I don't think so.

I have read a lot of books on health and nutrition.  I am in no way an expert, and have many unanswered questions myself (someday when I have more free time I hope to really investigate this topic).

There are lots of studies suggesting that whole fat, grass fed dairy products contain more healthy fats necessary for health, contain more nutrients and vitamins A and D that are better absorbed by our bodies.  Did you know that most skim milk is first diluted down to a watery state and then they add powdered milk back into it so it is a similar consistency of while milk.

I, like most other Americans, have quite a bit of trouble going back to full fat yogurt and milk but we are going to try it!

I tried to find easy to read articles with researched based evidence supporting this decision.  They are available but most are really, really lengthy.  Below are a few links with info regarding dairy.  Let me know what you think.....

Some people suggest drinking raw milk.  I do actually think this provides the most nutrients but there is also risk of listeria and plenty of other infections so I have no intention to jump on that bandwagon.


For now we will try to drink organic, whole milk and if possible milk from grass fed cows that is low-temp pasteurized (only available at one store in our area so I won't go there every week).

Yesterday, after getting the kids dressed I ran upstairs to take a shower.  Carson came with me but I left the other two downstairs in the playroom.  Lainey had mentioned to me that she didn't like the outfit I picked out for her after I helped her get dressed but since it was made after getting dressed and we were behind "schedule" I told her it was fine.

Lainey disagreed.  She didn't fuss about it but while I was in the shower she managed to completely disrobe (tights, dress, and shirt).  She then found a bench, climbed up in her closet, picked out new clothes, and got dressed again.

She was quite proud of her all pink outfit.  I was quite amused.  Funny girl!

Lainey:

Lainey didn't fall far from the tree when it comes to sass.  I'm sure I don't need to clarify which parent is responsible for that gene.  If I do, you clearly don't know us well.  Anyway, yesterday I was putting Lainey down for a nap.  She has never been one who likes being cuddled or held.  Well, I was reading her a book and tried to put my arm around her.  She abruptly looked up and said, "Mom, Don't touch me!"  Okay.  Moving on I finished the book and laid down next to her so I could rub her back.  She once again looked up at me and said briskly, "Mom, GO out!"    I did and she went right to sleep.  Haha!  Miss sass.

This morning while Erik was at school Lainey and I were making cookies.  I jokingly asked her, "Lainey, who loves you the most?!"  With NO hesitation she enthusiastically answered, "Grandma!"  I asked her who else loves her a lot, "Papa!"  I tried once again.  This time she had to think for a while but finally said, "Erik!"  I then gave up!!  Haha!  At least she knows a lot of people love her!

Erik: 

When I picked Erik up from preschool on Friday he was really sweaty.  I asked what he had been doing and he said, "Chasing the girls!"  Hilarious.  When I asked for further clarification he explained that he and Nico had been "bad guys" and were chasing Sophie.  She apparently wasn't real happy with this arrangement.  Today when I picked Erik up from school I asked what he did at school and he reported that he and Nico had been "walking slowly."  Haha!  Maybe the teachers weren't too pleased with the "chasing the girls" activity either! 

Carson - 9 Months!

Carson is a BUSY 9 month old!! 
He is still the happiest baby ever but now I'd say he also gets 
 in quite a bit of "trouble!"  



Eating:

Still nursing 6-7x a day, once in the middle of the night
Eating some solids.  I offer him solids 2-3x a day.  
He prefers to feed himself if possible.
I made some egg-free blueberry pancakes (not trying anything with eggs for a while as I am still slightly traumatized by Erik's first bite of pancake) and he thought those were exciting!!  

He doesn't have a very good "pincher grasp" yet so he picks the tiny pieces of food up by clenching them in his fist and then shoving his whole hand in his mouth, hoping to get a bit of food with the fingers.  I find this pretty hilarious!

Carson now has 5 teeth!

Sleeping:

Generally speaking he gets up once a night around 2:00 AM. I feed him and he goes back to bed until 6:00 or so (goes to bed around 7:00 or so).  

Takes two naps a day -- approximately 3 hours total.  Sometimes his schedule is screwed up due to sibling activities.  He adjusts well!  

Health:

He has been healthy this month thankfully.  He is still coughing/wheezing (has been since September) and gets the budesonide nebulizer 2x a day. I am not convinced this is making a difference and will ask about it at his 9 month check up.

Development:

He cruises fast on everything!
He can "walk" from one object to another (cough to chair) as long as he is hanging on with one hand.
Pulls up on everything even walls.
LOVES to push the wagon around and walk behind it.
Can grab things off of the floor while standing if hanging on with one hand.
Can walk while I hold only ONE of his hands!!  
I saw him take ONE step independently but he fell quickly after that.  
Walking isn't far off though!

Personality:

Carson is very busy! 
He LOVES slamming cabinets and drawers open and close, ripping up paper  sticking his hands and toys in the toilet, eating ANYTHING off of the ground (crumbs, rocks, paper, toys, etc.), throwing himself back while you hold him (it's a game!), playing peek-a-boo, playing independently.

Carson loves balls and plays catch by himself.  He throws it and crawls after it repeatedly.  He is a very busy baby but also extremely content.  He will happily play by himself for an hour if you let him.   

I think Carson has been my easiest baby by far but I envision him as an extremely busy toddler that requires a lot of chasing/attention.  We'll see!

Food Challenge Week 5

This week we added the challenge of eating locally raised meat.  I bought some ground beef from a local farm but the rest of our meat was from the grocery store.  I usually only fix meat 2-3 times a week so about 1/2 our meat is now locally raised, grass fed. 

I also was able to get information regarding other local sources of meat but haven't had a chance to look into those farms yet. 

Week 5 challenge is....  Add Two new whole foods into your diet!  

Our new whole foods this week are going to be.... 

1) beets!
2) cranberries
3) Kale

I am looking for a good way to prepare beets (Jill B?!).  I have truthfully never consumed a beet before so it should be interesting.  I don't like cranberries so I never buy them but thought I should give the kids a chance to try them. 

I already made a soup using the kale and it was delicious!!

Here is the recipe....

Cheese Tortellini Soup:

Dice/Chop up the following...

Onion
Garlic -2 or 3 cloves
Sweet Potato (1)
Carrots (4-5)
Kielbasa sausage (optional -- I added about 1/2 cup from some leftovers)

Saute' for 8-9 minutes in a little olive oil
Season with thyme, oregano, and a bay leaf

Add 4 cups of chicken stock and 4-5 cups of water
Bring to a boil

Add....
4 cups of chopped kale
1 can of white beans

Simmer for 3-4 minutes, until kale wilts

Add cheese tortellini (9 oz) and simmer until cooked  (4-5 minutes)

Serve immediately, top with parmesan or asiago cheese

All of my kids liked this! 
I served it with homemade cornbread!

School Boy

Erik has really, really become interested in school this fall.  He asks me to teach him how to read and loves to practice his numbers and letters.

Here are some photos of our most recent projects....

 I wrote out 0 through 20 and mixed them up.  
Erik taped them to the paper in the correct order on his own without looking at his "number board."
He did mess up once, but when I told him to look at it again, he was able to correct the problem on his own (he had 0-12, then 17 initially).

He writes his letters and numbers from the bottom - up.
That's seems backwards to me, any suggestions mom or other teachers??

Ahhh!!

Have you ever had a week that left you feeling like this??



That yelling is courtesy of an overtired Lainey and Carson. 
I considered joining them but decided it was kind of hilarious and recorded it instead.
Thankfully, our drive was only 2 miles and double yelling is quite unusual.  
I had been planning to do a post about Advent season as our pastor is doing an
excellent series of sermons called "Finding Our Way To Christmas."


This week I haven't been thinking much about Christmas. 
I've been walking around in a cloud.  I actually spent 3-4 minutes today looking for my 
keys when they were already in my hands.  Haha!

 Two people I love dearly have been dealt really difficult cards recently. 
It's overwhelming and scary.  Sometimes, living in this broken 
world it is so easy to get discouraged and lose hope.  

Feeling like this I thought there was no point in talking about the series
at church.  But I decided it was actually quite appropriate because the first sermon was
a reminder to have faith, even when others doubt and it seems impossible.

My cousin Julie told me I need to "pick a verse" for the moments when life seems "shafty".  
So,  I am stealing this from my cousin Terri's blog...

Yet God has made everything beautiful for its own time. He has planted eternity in the human heart, but even so, people cannot see the whole scope of God's work from beginning to end.
Ecclesiastes 3:11 

So, I am going to trust that even when the situation seems less than desirable that God knows what He is doing and will make it "beautiful" in the end.  

Lets take those crappy cards and run it!

Notable Moments - Carson

 This morning I kept Carson with me at church because I knew he would need to eat during the service.  Well, he is very social and kept "flirting" with the people around us.  He seemed particularly fond of the man sitting next to me.  He kept smiling at him and eventually scooted over, grabbed onto the man's sweater, and laid his head down on the man's chest.  He then peeked up at him again, smiled, and laid back down on his chest.  It was so so cute although certainly distracting so I sent him to the nursery after he ate. 

Carson now LOVES to fling himself backward when you are holding him.  He thinks it is a fun game!  Hopefully, he won't try it unless I am paying close attention to him or he will land on his head.

Food Challenge Week 4

Well, we completed week 3 which was eliminating fast food and fried food from our diets.  We do eat out about 3-4 times a month but didn't miss it this week.  I decided Qdoba doesn't count as fast food (and it's not fried) so we will likely go there if we eat out a couple times a month.   The only time we go to a sit down restaurant is when the kids stay home (at most 1x a month).

This week I have stopped missing my diet coke!  Yay!! I do feel healthier without it.  Hopefully, that is the case.  I haven't drank tea everyday ether so I have actually been caffeine free part of the time.

This week we will be focused on MEAT! 

We are supposed to eat meat raised within 100 miles of our house.  This is a bit challenging but I was able to buy some local grass fed beef from the farmer herself.  At this point only are beef will be local.  We don't eat a ton of meat but I can't figure out where to get locally raised chickens at this point.

We do get our eggs from a farmer (maybe I will ask her about her chickens!). 

We are enjoying this food challenge so far!  The kids have increased their fruit and veggie consumption with no complaints.  Erik has stopped asking me to send him to school with a juicebox.  Yay!

Total Saved: $13 (I think I am off by about $10 but I can't figure out what I am forgetting!)

Total Food Bill: $691  - not too bad considering our food revolution process

I have about 2/3rd of Christmas shopping done already.  December is going to be tricky as we have repairs in both the WI and MD house that need done, I got my hair highlighted, I need to re-order contacts, finish Christmas shopping, and we will have to pay for both Tae kwon do and gymnastics for the kids.  We will see how it goes!

On The Move!

Carson has been on a mission this week.  When he isn't nursing (which he has been doing constantly since we returned from NYC) he is moving.  He opens all the cupboards and drawers, pulls up on everything (trash cans, island stools, legs, etc.), and most recently walks behind a wagon/push toy.

Grandparent Daycare

Drinking (or rather chewing on) bottles.  Carson didn't sleep well for my parents, I think most likely because his milk consumption was probably close to 60% of normal plus he has a cough.  Mom was up a lot!


Gingerbread man escaped from the oven.  He left clues around the house.  His feet got chopped off when they found him so he couldn't run away again!!


 Dad got a new DSLR and was practicing taking shots of the kids.

NYC

This weekend Victor and I left the kids for 48 hours with my parents.  We spent the "weekend" by ourselves in NYC.  It was wonderful.  I really felt like we were truly on vacation for the first time since having kids. Ahh! 

We were very busy but relaxed.  Thursday morning we left our house at 6 AM, flew from DCA to JFK, and were checked in our hotel by 10:45 AM.  We spent the morning/early afternoon walking from our hotel (94th street) to the top edge of Central park (110th St) all the way to Times Square (40th Street).   Approximately 90 blocks, plus some unaccounted for wandering.

I had been in Central Park before but never really spent any time exploring it.  We stopped at all the sights this time.  It was a beautiful day and now I can say I have seen every attraction in Central Park (except for the zoo)! 

We ate lunch at an excellent restuarant owned by chef Todd English, located in the Plaza Hotel.  Everything was great but I can still taste the carmelized brussel sprouts.  Yum!! 

We spent the late afternoon/early evening in Times Square.  We ate a piece of NYC cheesecake at Roxy's.  We finished out the day at Top of the Rock.  Victor suggested we walk back to the hotel.  Ha!  No thanks! 

Friday we walked over to "the" shopping district and updated our wardrobes a bit.  Fun!  Then we took a cab to Wall Street.  We saw a small group of protesters marching and visited the 9/11 memorial.  We then walked over to China town and ate dinner.  I found my two favorites -- red bean cakes and pork sticky buns.  I asked a Chinese shopkeeper where I could find those and she told me where to find them but suggested neither of them were really Chinese.  I found a new favorite food as well - green tea coconut cakes.

Friday night we saw the Tony Award winning show, "War Horse."  It was a play based on WWI.  During that war the soldiers rode horses during battles.  Apparently 10 million horses and 8 million soldiers died during WWI.  Unimaginable to me.  I just pray there are no major wars during my lifetime or my kids.  It must have been so awful.  The play was fantastic and the horse "puppets" were amazing.  You truly could almost forget they weren't real. 

We got back to the hotel around 11pm that night and were up at 5 AM to get ready for the airport on Saturday. 

Erik, Lainey and Carson had a great time with Grandma and Papa.  When I asked them today if they missed us I got a very affirmative, "NO" as an answer.   Good thing there were two of them to take on the trio as sleep was fairly limited while we were gone.  Ha!  Photos to come in the next post.

Food Challenge: Week 3

Well, I am actually switching weeks because I am not prepared for week 3's task of eating meat raised within 100 miles of our house.  It is available but we were out of town this weekend so I didn't buy any yet.

We are going to tackle the original week 4 this week and get back to the meat next week.

So for this week....

Week 3:
No fast food or deep-fried foods – No fast food or any foods that have been deep-fried in oil.

We are going to be adding this onto the 2 fruits/veggies with every meal and restricting liquids to coffee, tea, water, and milk.

We do not eat out often compared to most Americans but I do take the kids out for lunch about once a week which we will probably not do anymore since the food needs to be fast if I am going to take all 3 out on my own. :)

Happy Anniversary (To Us)!

Today is Victor and my 6th anniversary.  I've been thinking about the past 6 years a lot this week. They have been busy!  I kind of recapped the years highs and lows in my head and thought I would share them with you....

Year One:  (Nov '05-Nov '06)
We get married! Victor starts a new job at GE that require longer hours and LOTS of travel.   We build our house in Waukesha, sell Victor's town house, live temporarily in an apartment, move into the new house.  We try to get pregnant, unsuccessfully.  Given the amount of travel and stress one can only imagine why it took close to a year to conceive Erik.

Year Two: (Nov '06- Nov'07)
Tell immediate family we are struggling to get pregnant.  Next month --Get pregnant!!  Victor gets activated and relocated to Washington DC.  I spend 6-7 weeks with him during the initial 4 months of activation.  We go home to have Erik!  We move back to DC shortly after Erik is born for an anticipated 7-8 months.

Year Three: (Nov '07 - Nov '08)
Savor being new parents.  Tired (Erik is up every 2 hours for 8 months) but overwhelmed with the joy of being a mom!  Victor is working at the pentagon (12 hours a day) and asked to stay for an additional 3-4 years.  We agree.  Move home to WI for 2 months, try to sell our new, never lived in house but find renters instead.  Move back to a new house (rental) in Alexandria, VA.  Find out I am pregnant with Lainey! So blessed but a bit shocked since this time it happened immediately!

Year Four: (Nov '08- Nov'09)
Get settled in Alexandria. Blessed to get to know a really good group of friends which makes it feel like home to me.  Victor switches positions at the Pentagon but this doesn't disrupt things at home.  Meet our sweet Lainey!  Struggle to adjust from one kid to two.  This was a really difficult transition for me.

Year Five: (Nov' 09-Nov 10)
Lainey struggles with constant ear infections.  She is a really grumpy baby.  We go on a fun Disney Cruise (which was canceled originally due to kids with croup/bronchitis).  I am still struggling to adjust to being a mom of two.  Things seem easier when she turns one.  Victor was offered a new civilian job in Southern Maryland.  Try to sell Waukesha house again, no luck.  Make plans to build a new house in southern Maryland, plans fall through.  Find out I am pregnant with Carson!!  Very excited and blessed!  Find a new renter for the Waukesha house and stumble upon a spec house that will work perfectly for our family.  Terri and Austin meet and say goodbye to Jake (this impacts me significantly). Move to southern Maryland.  Victor starts a new job.

Year Six: (Nov 10-Nov 11)
Adjust to our new hometown and job.  Victor starts reserve duty again.  So thankful for Victor's new works scheduled (10.5 hours a day instead of 12 and every other Friday off)!  This makes a much bigger difference than I realized! Lainey gets tubes in her ears after 8-9 ear infections.  She is SO much happier!  Meet our sweet baby Carson.  Much easier transition from 2 to 3.  Happy baby and kids!  Lovely neighbors and new friends.


These past 6 years have been filled with lots of wonderful things (3 kids, need I say more), lots of stressful things (7 addresses, 9 moves), and lots of learning (if not parenting, marriage should definitely come with a rule book!).  Ha!

I am so thankful to be where we are today!  I love being back in a small community, being able to be stay at home with my kids, and  am thankful for a less intense job for Victor.  I look forward to many new lessons, trials, and blessings in the future and am glad to have Victor by my side as we walk through life together!

It was really interesting to think back through the major events of the past 6 years!  If you haven't I challenge you too!

Food Challenge: Week 2 results

Well, I survived.  It was actually harder than I thought it would be.  I am still craving diet coke which surprises me!  I do like tea and it substitutes the caffeine okay but doesn't make up for the actual diet coke. Oh well!

I am not sure what I will do regarding diet coke consumption in the long run.  I do know I won't buy it for the house again but I haven't decided whether or not I will drink it on occasion when at parties or out to eat.

This is our "free week" with no rules but I am still planning on sticking to the beverage rules (water, milk, tea, coffee).  I can't say Victor has the same plan.

The kids did fine with this!  I had been sending Erik to school with a juice box 1-2x a week but stopped this a month ago. Instead, I have sent with with a glass and swirly straw.  He refuses to drink out of it and tells me he isn't thirsty.  Ha!  He hasn't really complained about the lack of juice but clearly misses it a bit. 

I should mention that Lainey still drinks Almond milk rather than cows milk as cows milk has always upset her stomach.  I am not ready to try switching her over yet.

Ready for Winter

Well, at least we have the winter gear now.  I am more than happy to have this
60 degree weather stick around for another month.

Carson hated the hat with passion (stood solo because he tried taking the hat off with two hands).
Hopefully, his mittens will force him to leave it on.  We'll see.

Food Challenge: Week 2

Well, we made it through the week one goal of eating 2 servings of fruits or vegetables at every meal without any difficulty.  In the past I think we probably were eating 3-4 servings a day instead of 6-7.  The kids adjusted without any problem as did Victor and I.  I did notice I felt full (or bloated) more than normal.


Week 2 Challenge: "Real Beverages"  

Beverages will be limited to coffee, tea, water, and milk (only naturally sweetened with a little honey or 100% pure maple syrup). One cup of juice will be allowed throughout the week, and wine (preferably red) will be allowed in moderation (an average of one drink per day).

This will not be a challenge for Victor, but I have to give up my daily diet coke.  I have been thinking about this for a while but haven't tried since I really "need" my morning jolt.  I do know it will be better for me though.  Not to go completely crazy I did get some black tea which apparently has more caffeine that diet coke! I am 2 days into this challenge and miss the diet coke more than I anticipated.  We will see how the week goes!

We are planning to continue week one still in addition to week two.

I tried 2 new recipes this week, homemade humus and crock pot "refried" beans.  Both were great although I made the humus a little spicier than Erik would prefer. 


Easy Slow Cooker Refried Beans

  • 1 onion, peeled and halved
  • 2 cups dry pinto beans, rinsed
  • ½ fresh jalapeno or other hot pepper, seeded and chopped (I used 4-5 small peppers from our garden)
  • 2 cloves garlic, minced
  • ¾ teaspoons salt
  • ½ teaspoon black pepper
  • cumin and chili pepper to taste
  • 6 cups water (or 2 cups of chicken broth plus 4 cups water)
Combine all ingredients in slow cooker.  Cook for 7-8 hours (until tender).  Mash up or blend 25% of the bean mixture.  Serve.

I have made these twice.  Once I made them more of a chili flavor and served them over home made cornbread and topped with cheese.  The other time I used more cumin for a "taco" flavor and served them in burritos with avocado, red peppers, cheese, sour cream, and cilantro.  Yum!!

Carson- 8 months

 Happy, Busy, and Loud

Carson is still the happiest baby I have ever met. 
He bounces with joy and is so much fun to be around.


Carson is very, very busy!
He crawls everywhere very quickly!
He is able to pull to a stand and cruise along couches and chairs! 
I have seen him let go of the couch and stand independently for 10 seconds a few times.
I anticipate he will be taking steps by his 9 month update. 

Carson is noisy! 
He doesn't babble a ton but he loves to shriek. 
He plays a game with Erik and Lainey.  
He shrieks at them trying to get their attention, 
when they shriek back at him he giggles and laughs.
Annoying and cute at the same time. 

Carson loves banging his hands on the counter, hitting pots and pans with spoons, 
pulling all of the magnets off of the fridge and banging them on the floor.

Carson is still passionate about nursing.
I nurse on demand, probably every 3 hours or so. 
He is eating solids a little better and is up to 19.5 pounds.  

 So far he has been offered.....
sweet potatoes
butternut squash
 black beans
kidney beans

brown rice
bananas
pear
One hunk of french bread (he was excited about this)
One frozen bagel (equally excited!)
 Carson is still wheezing although this has improved
significantly after starting him on budesonide nebulizers 2x a day.
He will likely be on these the entire winter as he has been wheezing since September.
He hates the nebulizer but will tolerate it if we let him watch a movie during it. (Awesome!)

Carson is still on Prevacid, 15 mg a day.  
He is still spitting up some but it doesn't bother him.

Carson is still getting up 1x a night most of the time.
He did sleep through the night 4-5x this month, he also got up more than 2x a night 4-5x this month.
Generally speaking I am only willing to nurse him once a night.
If he continues to increase his solid intake I will cut out the night feedings completely.

This month Carson struggled with bronchiolitis, went to Philadelphia to hang with his cousins,
and spent lots of time being drug from activity to activity for his siblings.  

Carson is such a joy!
I am so thankful for him!

Erik:

We went on a hike today through a local sculpture garden.  Erik was doing a "dance" so I asked him if he needed to go to the bathroom.  He responded, " Mom, stop bothering me!  I don't need to go to the bathroom this is just part of my walking process."  Okay, honey.

Lainey:

When getting her ready for bed the other day she told me, "I don't want these PJ's I want to wear my sassy pants."  Ha!

When I was Old/Twinkle Twinkle

"When I was old...."  is the way Erik starts almost all of his pretend stories.  They can be about anything... being a farmer, being a parent, shoveling snow, digging for dinosaurs, etc.  He tells me at least 2-3 "When I was old" stories daily and has been for 3-4 months now.  At times I remind him that he hasn't ever really been old but most of the time I just savor his creativity and the fun stories.

One of his buddies James is 6 and not quite as amused by Erik's imagination.  One afternoon James came over to verify with me that Erik hadn't ever been old before.  That night, he told his mom he wasn't sure he could be friends with Erik anymore because he wasn't a fan of "When I was old" stories! Ha!!  The next morning they were out digging for fossils under James' deck though.

It is interesting to see the developmental differences between a 4 and 6 year old surface from time to time.  They are both quite interested in rocks, diggers, guns (it's innate I swear), dirt and most recently Tae Kwon do so those common interests seem to win out these days.  James is a great neighbor and friend so hopefully Erik was give up the "When I was old..." stories before he really irritates his bigger buddies!



Little Lainey LOVES music!  She always has and I love it!  She sings herself to sleep most of the time.  She is very opinionated about what music I play in the van.  She also sings throughout the day.  Her two favorite songs to sing are the ABC song and Twinkle Twinkle.  Her favorite song to listen to is the "Monkey Song."  I don't know the actual name of this song but it is number #1 on the CD we got from Cullen's 2nd birthday party.  She insists we put the CD on repeat for first tract every nap and nighttime.  Lots and lots of the Monkey Song!


I have been trying to capture her singing for a month or so.  As you can see she has been a bit camera shy.  I finally was able to get her to sing through a song or two.  Of course, sibling rivalry had to kick in for that video. Oh well.  Enjoy!
